An indispensable attribute of a deep fryer are filters, which are of two types - disposable paper filters for oil, which ensure its purification and, as a result, longer use, as well as filters made of activated carbon, which serve to trap oil vapors and odors generated during cooking.

Even in such a relatively simple device as a deep fryer, the creative imagination of the developers of household appliances is fully manifested. The Italian firm DeLonghi is traditionally strong in this respect, its deep fryers are distinguished by original technical solutions.Inclined rotating oil container (fig. 2)

Let's get acquainted in more detail with the device of the deep fryer using the example of models of the Moulinex Supremia family (AS1-AS7). The design of these fryers has a number of interesting features. For example, the models of the Supremia Condensor subfamily (AS3, AS6 and AS7) are equipped with the original Condensor steam condensation system (Fig. 4), which serves as an additional means of combating unpleasant odors. In a compartment made in the bottom of the device, two cassettes with eutectic liquid (cold accumulators) are placed. The eutectic liquid has a blue color, which is specially imparted to make its leaks visible. The cassettes are pre-frozen in the freezer for at least 24 hours. By taking heat from the steam entering the steam duct into the compartment where the plates are located (there is no other outlet for the steam, since the cavity of the fryer is hermetically sealed when the lid is closed), the cassettes serve as the center of condensation formation. After the end of the operation of the device, condensate is drained from the tray with cassettes.

Fryers have a power of 2000 W, at which an oil temperature of 180 ° C is reached in 9 minutes and 30 seconds. Fryers are designed to cook 1 kg of French fries in 2 liters of oil, equipped with a stepless temperature regulator (operating range of the thermostat 160-190 ° C), a timer for 99 minutes with a sound signal and a liquid crystal indicator. The AS4 and AS5 models have an additional 180 ° C safety thermostat. Models AS4 and AS5 are equipped with a fuse for 184 ° C, and models AS1-AS3 for a temperature of 152 ° C. The removable rectangular butter bowl has a non-stick coating. The potato basket has a built-in lifting handle that can be used to lower the basket in the oil or raise it without opening the lid. The lid itself has an automatic locking system, which excludes its arbitrary opening; to unlock the cover, you must press a special key.

To provide additional safety when using the fryer, there are limit switches in its electrical circuit that close when the bowl of oil is inserted into the body, and the cassettes (cold accumulators) are in the tray.

In all models:
Cover: remove the hinges from the sockets by pulling them sharply up one by one (fig. 9).To disassemble the hinge, 7 screws are unscrewed on the inside of the cover, and then 2 screws each fixing each hinge. To remove the cover seal, pry it off and pull it up and forward (or up and back), separating it from the 18 attachment points.

Base: after turning the device over, unscrew the two screws securing the cover to the base (fig. 10, item 1). Disconnect the power cord (models AS1, AS4 AS5). Unscrew the 6 screws securing the base (Fig. 10, item 2). On AS3, AS6, AS7 models, you can disconnect the power cord at this point.

Front panel: loosen the two screws securing the front panel (fig. 11, item 3). Insert a thin screwdriver between the panel and the casing and squeeze the panel fastening tabs (fig. 11, pos. 4).

On models with removable oil bowl (AS4, AS5, AS6, AS7):
Adjustable thermostat: Unscrew the two fixing screws (fig. 13, item 1) and remove the base. Be careful with the thermostat spring! An adjustable thermostat and two switches are available.
Fixed thermostat and fuse: remove the steam line and cassette limit switch (fig. 14). Remove the two screws holding the mounting support to the rear panel (Fig. 15, item 1) and slide the support (Fig. 15, item 2). Pressing the locking tabs, remove the fixed thermostat (fig. 15, pos. 3). Be careful with the thermostat spring! Remove the fuse.
Heating element: disconnect the power cord (models AS6 and AS7, fig. 16, pos. 1). Disconnect the heating element terminals, being careful not to damage the ground terminal. Unscrew 4 screws securing the heating element to the double wall (Fig. 17, item 2). The heating element is removed from the cavity.

The assembly is carried out in the reverse order, paying attention to the following.
Be sure to connect the ground wire.
Fixed thermostat and fuse (models AS4-AS7): secure the fuse well by bending the tabs (fig. 18) and placing it in the recess on the side of the thermostat. When attaching the thermostat to the mounting support, remember to insert the spring (fig. 19, item 1).
Adjustable thermostat (models AS4-AS7):
When installing the adjustable thermostat, remember to install the two spacers (Fig. 20, item 1), the thermostat spring (Fig. 20, item 2) and the spring of the oil bowl limit switch mechanism (Fig. 20, item 3). Lid locking mechanism (all models):
Remember to install the springs (figure 21, items 1 and 2).

Steam path: install two seals (Fig. 22, item 1), springs (Fig. 22, item 2), position the switch terminals correctly (Fig. 22, item 3).

Reason: on models AS4 and AS5 remember to fit the 4 spacers (fig. 23). For models AS3, AS6 and AS7, fit the gaskets of the cassette tray correctly (Fig. 24, item 1), for model AS3, remember to put also two silicone inserts (Fig. 24, item 2). Cover seal: it is best to install it while the cover is removed. The lip of the seal is guided into the groove (Fig. 25, item 1) and gradually sunk into it along its entire length (Fig. 25, item 2) until the entire seal is fixed in the groove (Fig. 25, item 3).

The question is, to turn the fryer back on, you need to disconnect the device from the mains, insert screwdrivers into the hole and press the sensor reset button - red.

There is also a hidden blockage here - the contact with the blue wire has just melted on it. The blocking is needed so that the heater is turned on only when the unit is installed on the container. The blocking is consistent with the entire device, so the contacts on the blocking are on and the device does not work.
