The machines are produced with one or two lever handles, and the second option is considered more reliable.

Operating principle: the cartridge is put on the jar, fixed, and then the machine is turned on. Depending on the model, it turns off by itself or you have to adjust the seaming process manually.

Most often, electric seamers are used in canning industries, but some craftsmen manage to make similar devices with their own hands. There are many models, as well as authors, in this case. Some include fixing the can, adjusting the neck size and automatic shutdown, while others are extremely simple and boast only high-quality and fast sealing, which does not require much physical effort to create.

You can buy seaming caps in season at any store, but is it right to grab the first package you come across and run to the checkout in an effort to quickly roll up the next batch of ripe berries or vegetables? Poor-quality closures are just as likely to spoil products as poorly washed ingredients or leaking closures.

Jar lids are made from different materials and are used for various types of preservation:

• glass lids - currently not available, but some housewives still use them out of habit and because of their durability;
• screw caps (thread) - used for conservation in special cans, convenient, can be reused;
• plastic lids (nylon) - less common on the market, used for making quick preserves. They can withstand winter, but need long-term sterilization;
• aluminum covers - springy when pressed, suitable for all types of seaming, sterilized quickly;
• tin lids - actively resist oxidative processes, suitable for preserving vegetables and mushrooms with a large amount of acid.

It is advisable to use all metal covers only once for hygienic reasons.

How do you know if the lid you found on the shelf is suitable for use and if this product has an expiration date? There is no official deadline on the covers, but it's pretty easy to figure out. Carefully inspect the rubber o-ring located inside the bezel of the covers - if it is soft, pliable and does not crumble in your hands, then the cover can be used. But if the ring has hardened or began to crumble, then it is better to throw it away, because a jar sealed with such a lid will still not last until the cold weather.

All lids must be coated with an acid-resistant varnish. It is desirable from both sides, but only from the inside.

In general, it is not so important which device you choose, because if you know how to use a seaming machine and spare no effort, then culinary masterpieces will definitely be preserved throughout the winter.
